Cook in the Morning, Butcher at Night!

Updating this journal is getting pretty difficult these past few weeks/months. More often than not, I can only manage to update once a week! Twice a week is already a luxury! I’ve been really busy with our meat processing!

Normally, a day for me is, I go to ISCAHM in the morning, then back to our processing afterwards.

We are technically just a 4 man team at the moment. We are pretty small in terms of man power but in our industry, the machines are the ones that do the work!

And we work fast. Really fast!

For the moment, we can make sausages. The machine below makes our emulsions.

Since we have a smoke house, we can also make bacon.

What I hate about bacon is that it needs to be chilled before it gets sliced. It takes a lot of time to chill it but it is required to firm it up.

As of late, we can also make square hams or meat rolls.
