ISCAHM – Spices and Costing Exam! Week 15

Smile, sense, and taste. These were the things that happened during our spice exam.

The front picture was actually our costing exam. The costing exam is a costing exam. It is what it is. The part that was more flavorful (no pun intended) was our spice exam.

Chef Manoj is the only one who handles this exercise for everyone. After finishing our lecture week on herbs and spices, he gave us this sort of hands-on exam on herbs and spices. He gave each one of us 15 minutes to take a look, smell and taste 50 herbs and spices that were labelled, which he prepared above.

After which, each individual must determine the herbs and spices without the labels on. Failure of the exam results in a punishment!

Since I am currently practicing charcuterie, I was pretty confident with this exam.

I mean, I deal with PLENTY of spices in my spice room pictured above. One can actually say that this exam fits me perfectly.

There was more to the spice and costing exam this week. It was also pasta week! Carboload! BAM!

    you guys were lucky. we were given only 10 minutes. and im sure the extra 5 minutes of familiarizing ourselves with those almost “alien” spices would’ve definitely made things a lot less impossible. but anyways, kudos to you, hershey for getting everything. genius indeed!
