ISCAHM – Knife Skills Exam! Week 13

Stations were set. Everyone brought and sharpened their knives. Here we come for our knife skills exam! This is our first individual hands-on practical exam.

Before, they used to say that the knife skills exam was a surprise. No date will be mentioned. However, they actually gave us a date for the exam. So in preparation for that, I actually practiced at home.

I practiced the sizes of the cuts. I made sure that I was as precise as possible with little waste.

I didn’t practice any turning since we already had tons of turnings during kitchen time.

During the exam itself, each one was given his own station.

There were two phases: one was peeling and the other was the cutting itself. We were given a time constraint to peel our vegetables first.

Then, we had another time constraint to cut the vegetables.

When the time was up, we were all asked to leave and Chef Uli together with Chef Rudolph checks the individual stations on how well we did.

The bad part was that we don’t get to see our grades. But I am pretty confident of what I did since I was able to finish it before the time was up and I think my cutting was pretty much uniform in sizes too. I hope I can do well again next time. I heard that we have a total of 3 knife skills exams.

    haha nalala ko nung si chef uli as usual lahat napapansin, question lang what batch ka? im fr. batch 6 sec. c
