ISCAHM – Class in Aubergine! Week 11

What do you guys think we had in Aubergine as a class?

Beverage class for the diploma course in ISCAHM was held in Aubergine since… I actually don’t know. But the reason behind it is: first, the instructors are based in Aubergine and second, the wines and other beverages are in Aubergine.

Here is Chef Hans Schallenberg (I’m not sure with the spelling. Sorry!)

He is the partner of Chef Norbert and is the co-owner of ISCAHM and Aubergine. He is a great chef and is one of the people who built Makati Shangri-la! Awesomeness! Normally, it is Chef Hans who teaches ISCAHM students about wine, spirits, etc. However, he only taught us about the brief history of wine.

So who taught us for 3 days in Aubergine about beverages? Let us welcome Sir Jun Araneta!

He is the sommelier and the restaurant manager of Aubergine. He worked with Chef Hans before in Makati Shangri-la as the head beverage man.

3 days in Aubergine were productive and full of interesting information especially for someone who doesn’t drink and would really want to learn how to appreciate wine, like me.

Sir Jun taught us how to check for the quality of wine and everything about it.

From Old World wines to the New World wines, the guy knows everything–from the good vintages to the good geographical locations of the wines.

We were not only taught about wines but also how to serve them.

And also how to decant a wine.

But the best part was smelting. We smelled and tasted the wines.

So if you were to go to Aubergine and want to know which wine to pair your food with, call for Sir Jun and he would love to share with you his passion for wines.

    i love this class:) kasi its not graded and additional info about wines, liquers, spirits!
